How Modern Diets Are Failing Us and What We Can Do About It
James is co-founder and Chief Sustainable Nutrition Officer at Huel – one of the fastest-growing food businesses in the UK ever, having sold more than 400+ million meals globally. Huel produces nutritionally complete, convenient and affordable food products with a philosophy that embraces minimal impact on animals and the environment.
As a UK Registered Nutritionist, he has worked in the field of nutrition and dietetics for over 30 years, with seven of those spent at the NHS, where he gained extensive experience in a range of clinical areas. These included intensive care nutrition, weight control, diabetes, food intolerance and enteral tube feeding, as well as working with care homes in supporting their nutrition policies and menu development.
His rare expertise led to him becoming a trusted consultant in the health and fitness industry, where he has advised professional-level athletes – from podium-finishing World’s Strongest Man contenders to country cricketers, and from boxers to MMA fighters – and fitness enthusiasts on their nutritional needs, helping them to fulfil their potential.
James is passionate about empowering people to live healthier lives by helping them to make better dietary choices and promoting sustainable solutions for the impact the food system is having on climate change, food waste and our wellbeing.
This, combined with his depth of experience and ability to educate and engage, has seen him interviewed on CNBC and Food Matters Live, while his insights have seen him featured in Forbes, Daily Express and VOX. He is also regularly invited onto podcasts as a guest; these have included the likes of OYNB (a community of 80,000+ members in 140 countries), Founder Stories, The Dietitian Café and Catch Ups In My Kitchen.
In February 2024, he filmed a documentary-style interview with Jimmy McLoughlin OBE (a former special advisor to the Prime Minister on business, technology and entrepreneurship) for his Jimmy’s Jobs of the Future show. He is also in discussions to appear on the Deep Dive podcast with Ali Abdaal (New York Times and Sunday Times bestselling author of Feel Good Productivity, with over 5 million YouTube subscribers).

In Well Fed, James Collier, former NHS dietitian and co-founder of Huel, is on a mission to debunk the myths about food and nutrition to reveal why what we eat is not only having a devastating impact on our health, but also on our planet.
The industrialisation of our food system has wreaked havoc on earth’s natural biodiversity, diminished the nutritional value of the food that is produced and has been a major contributor to global warming. The result? A planet in crisis and a surge in diseases of excess.
By challenging conventional wisdom and embracing a more balanced and nuanced approach, Collier shows that we can:
- Improve our health by boosting physical and mental well-being
- Protect the planet by reducing our environmental impact
- Support our communities in fostering a more sustainable food system
Supercharge your health with Collier’s five pillars of contemplative nutrition, which offer a simple, holistic solution to inspire a sustainable approach to food.
The future of food, our health and the planet is in our hands. Let’s act now.
